Butcher’s Choice

Our butchers take a whole pork belly lightly cured with a citrus marinade, trim it neatly, then wrap it around a special stuffing made from ground pork, Moons Green Air-dried chorizo and prunes. They tie it securely then score the skin so you can roast it and create perfect crackling. One hearty slice will never be enough.

A loin of lamb from Ebony farm, marinaded with preserved lemons and spices, then stuffed with ground lamb, mint and herbs, rolled and tied and ready to roast. This is a beautiful merging of two familiar flavours. It’s the foundation for a memorable roast dinner. Just add vegetables!
