If you want to find Britain’s most exciting pair of charcutiers go no further than a farm in the heart of the Kentish Weald called Owley Farm. Here you’ll discover British Charcuterie pioneers, and the inventors of Beer Sticks, John Doig and Ian Jones, the owners of Moons Green Charcuterie.

They make more than 20 different varieties of saucissons using British ingredients at every opportunity. Their air-dried meats are all melt-in-the-mouth local versions of European classics. British versions of prosciutto, loma, coppa, bresaola, and chorizo are all made by hand.

Situated bang in the middle of some of the best livestock farms in the country they source free range meat of unbeatable quality.

Moons Green ‘Nduja

The great Calabrian speciality Nduja usually weighs in at about 80% fat. So we made two changes to create our recipe for this famous spreading salami. First we cut the fat to 15%. Then we added both fresh and dried chillies to give you a spicy ride that will light up your world. 

Air-dried Ham

At last an English air-dried ham to rival the European stars. Aged for 18-months, it’s a sublime flavour to savour.
